Lemon Curd Thumbprint Sugar Cookies

A little butter. A little frosting magic.

Tender lemon sugar-cookie thumbprints with glossy yellow lemon-curd centers and a light citrus drizzle.

The feature to preserve is the shaping: Roll thirty-six tablespoon portions about 20 g each, coat lightly in sugar and place 2 inches apart. Press a shallow well with a thumb or teaspoon and fill with ½ teaspoon lemon curd. Chill the filled shapes 15 minutes before baking.

Before mixing, measure without packing the flour. Make a shallow wide well without piercing the bottom. Use only ½ teaspoon curd and chill the filled cookies before baking; too much curd or warm dough allows the filling to escape.

Use the observable baking cues as well as the timer. Whisk drizzle sugar and lemon juice smooth. Drizzle over completely cooled cookies and let set about 30 minutes before packing.

Notes

  • US measures are shown first; gram weights help avoid packed flour. Spice weights are approximate: use measuring spoons for small quantities. Egg weights exclude shells. Temperatures are for a conventional oven. Prepared lemon curd is a required ingredient; follow its label for storage. Coating sugar and curd may be left over, so nutrition may overestimate actual portions.

Nutrition

Approximate nutrition per serving calculated from ingredient weights divided by 36; required fillings and toppings included, optional decorations excluded. Brands, unused coating and actual serving size affect the estimate.
