Ube Sugar Cookies

A little butter. A little frosting magic.

Violet ube sugar-cookie cut-outs with a delicate pale-purple icing and a buttery vanilla-like yam aroma.

The feature to preserve is the shaping: Roll ¼ inch thick, chill 30 minutes, then cut 2½-inch purple hearts or flowers. Arrange 2 inches apart and chill the cut shapes another 15 minutes.

Before mixing, measure without packing the flour. Sweetened ube jam brings additional water, sugar and solids; it is not a direct replacement for extract. Use a baking ube extract and check its label if you require vegan ingredients.

Use the observable baking cues as well as the timer. Whisk icing sugar with almond milk and the few drops of ube extract. Spread a thin layer on cooled cookies and let set about 30 minutes.
