Espresso Gingerbread Cookies

A little spice. A little Christmas magic.

Espresso gingerbread cookies with a soft molasses center and a light coffee glaze, without cocoa or chocolate chips.

Ground coffee beans leave gritty specks rather than dissolving.

Use instant espresso powder that dissolves in the dough and glaze, not gritty ground coffee. This formula has no cocoa or chocolate chunks, so coffee remains a distinct partner to molasses and ginger. It contains caffeine; strength varies by brand.

Glaze

  1. Drizzle coffee linesDissolve glaze espresso in the tablespoon of water. Whisk into confectioners sugar until smooth and thick enough for thin lines. Drizzle over cold cookies and allow about 30 minutes to set. Add a few drops more water only if necessary; extra drying can be needed in humidity.

Chef’s Science & Pro Tips

Choose soluble powder

Ground coffee beans leave gritty specks rather than dissolving.

Dissolve before mixing

Combining espresso with molasses avoids dry bitter clumps.
