Instructions

Mix

  1. Cream and combineBeat butter and both sugars for 2 minutes. Mix in molasses, then egg and vanilla; scrape the bowl. Whisk flour, soda, salt and spices separately, then mix into the wet ingredients just until combined.

Chill

  1. Firm the doughCover and refrigerate for at least 1 hour. If chilled longer than 2 hours, let stand about 20–30 minutes until scoopable; keep it cool rather than greasy.

Shape

  1. Portion evenlyHeat to 350°F (175°C) conventional, or 320°F (160°C) fan. Line pans. Divide into 32 balls, about 26 g each. Roll in the coating sugar. Space 3 inches apart; matching portions make matching sandwich halves.

Bake

Fill

  1. Beat a firm cream cheese fillingBeat the filling butter until smooth. Mix in softened block cream cheese briefly, then sifted confectioners sugar and vanilla on low speed. Stop as soon as creamy. If warm and loose, chill 15 minutes; this extra cooling is additional.

Assemble

  1. Pair completely cold cookiesMatch halves by size. Pipe about 1 tablespoon plus 1 teaspoon filling onto each of 16 flat bottoms, leaving a narrow rim. Add matching tops gently; refrigerate immediately. Serve after a brief 10-minute softening at room temperature.

Frequently Asked Questions

A few helpful answers before you bake.

Why is my cream cheese filling runny?

Warm ingredients, spreadable tub cheese or prolonged beating can loosen it. Use block cheese and chill briefly if needed.

Should I fill warm cookies?

No. Cool every half completely before adding dairy filling.

Can I prepare sandwiches for gifting?

Yes, but transport chilled in an insulated container and refrigerate promptly. They are not shelf-stable gifts.
