Gingerbread Thumbprint Cookies

A little spice. A little Christmas magic.

Gingerbread thumbprint cookies with sugar-crusted edges and smooth ivory white chocolate ganache centers.

Small pieces melt more evenly in the hot cream.

White chocolate ganache fills the baked gingerbread wells. Use real white chocolate with cocoa butter, not compound candy melts. The 2:1 chocolate-to-cream ratio makes a soft filling that firms when refrigerated. The cream measure is approximately 1/4 cup plus 2 teaspoons (70 g), not an exact simple fraction. Filled cookies need refrigeration.

Instructions

Mix

  1. Cream and combineBeat butter and both sugars for 2 minutes. Mix in molasses, then egg and vanilla; scrape the bowl. Whisk flour, soda, salt and spices separately, then mix into the wet ingredients just until combined.

Chill

  1. Firm the doughCover and refrigerate for at least 1 hour. If chilled longer than 2 hours, let stand about 20–30 minutes until scoopable; keep it cool rather than greasy.

Shape

  1. Portion evenlyHeat to 350°F (175°C) conventional, or 320°F fan. Line pans. Divide dough into 32 portions, about 26 g each. Roll into balls and coat with sugar. Space 3 inches apart. Press a shallow center with the rounded back of a 1/2-teaspoon measuring spoon.

Cool

  1. Let the structure setGently reopen wells with a measuring spoon while cookies are warm. Rest 5 minutes on the pan, then cool about 20 minutes on a rack. Fill only when fully cold.

Ganache

  1. Cool the white chocolate fillingWhile cookies bake, heat cream until steaming, not boiling. Pour over finely chopped white chocolate, wait 2 minutes, then stir gently until smooth. Leave at room temperature to cool and thicken while the cookies finish baking and cooling. If it remains too runny, refrigerate briefly, stirring often; extra cooling is additional.

Fill

  1. Add ivory centersSpoon about 1 teaspoon cooled thickened ganache into each cold well, dividing among 32 cookies. Refrigerate filled cookies airtight.
