Instructions

A · Prepare & mix

  1. Melt & seasonGently melt butter over low heat. Remove from the heat and stir in sugar, molasses, salt and spices until evenly combined. Let cool until lukewarm before beating in the egg.
  2. CombineWhisk flour with baking powder and baking soda, then mix into the wet ingredients until no dry flour remains. Dough will be sticky; do not add more flour.

B · Chill

  1. Firm the doughDivide into two flattened rectangles, wrap tightly and refrigerate at least 60 minutes, until cold and firm enough to roll. Chilling firms the butter and lets the flour hydrate.

C · Roll & cut

  1. ShapeHeat to 350°F (175°C) conventional, or 320°F fan. Roll chilled dough 1/4 inch thick and cut flat 2-inch houses. Transfer with a wide spatula to lined pans, 1 inch apart; keep unused dough cold.

D · Bake

  1. Check donenessBake one tray at a time 7–9 minutes, checking early because the houses are small. The edges should be set and slightly darker. Bake larger shapes separately.

E · Cool & finish

  1. Cool before icingRest 5 minutes on the pan, then cool on a rack about 15 minutes. Pipe white snowy roof lines, tiny windows and a door; add a red icing dot if desired. Let icing dry fully according to its packaging before packing.

Chef’s Science & Pro Tips

Keep the mini scale

A 2-inch cutter distinguishes these bite-size houses from larger decorated house cookies.

Pipe fewer details

Two tiny windows and one door keep the design readable without flooding the surface.

Check the first tray early

Small houses finish sooner than full-size cut-outs; inspect the edges at 7 minutes.
