Quick Gingerbread Cookies

A little spice. A little Christmas magic.

Quick small-batch gingerbread cut-outs made with cold butter and dark brown sugar, without a scheduled dough chill.

Cold cubed butter and a cold egg keep this no-chill dough workable.

A smaller cold-butter batch skips scheduled chilling and uses dark brown sugar instead of molasses. It still needs baking and cooling time; quick does not mean the cookies are ready in five minutes. Extra chilling is needed only if the dough becomes warm.

Ingredients

Scale

Scale ingredients and US equivalents, including eggs. Keep cookie size, thickness, oven temperature and baking time per tray unchanged. More trays add time; weigh beaten egg for fractional batches.

Instructions

Mix

  1. Mix cold butter and sugarBeat cold cubed butter with dark brown sugar about 3 minutes until evenly blended; avoid beating until very fluffy. Scrape the bowl. Beat in cold eggs, salt and spices.
  2. Add flourMix in flour on low just until a cohesive dough forms. There is no molasses and no chemical leavener in this formula.

Temperature

  1. Keep the dough coolNo scheduled chill is needed because the ingredients start cold. If rolling makes the dough greasy or soft, chill briefly until workable; extra chilling adds time.

Shape

  1. Roll and cutHeat to 350°F (175°C) conventional or 325°F (165°C) fan. Roll between lightly floured parchment to 1/4 inch and cut simple 3-inch shapes. Space 1 inch apart. Two pans hold this smaller batch.

Bake

  1. Check the edgesBake one tray at a time 9–12 minutes until the edges are set and lightly darkened. Cool each pan before loading another batch.

Cool

  1. Cool gentlyRest 5 minutes on the pan, then cool on a rack about 15 minutes until completely cold. Optional icing is additional.

Chef’s Science & Pro Tips

Start with cold ingredients

Cold cubed butter and a cold egg keep this no-chill dough workable.

Keep shapes simple

Broad 3-inch cutters are quicker to lift than detailed snowflakes.

Cool before icing

Even a fast recipe needs cooled cookies before decorating; optional icing adds time.

Freeze raw doughUp to 2 months at 0°F (−18°C)Wrap flattened dough portions tightly, then bag. Thaw overnight in the refrigerator and roll while cool.
Freeze baked cookiesUp to 2 months at 0°F (−18°C)For best appearance, freeze undecorated, cooled cookies airtight. Thaw covered at room temperature before icing.
