Lemon-scented Abruzzo-style wafer cookies cooked individually in a patterned ferratelle or pizzelle iron.

Abruzzo Ferratelle
Follow the tray sizes, portions and baking intervals in the instructions below.
Allow about 78 minutes: 15 hands-on, 0 chilling or resting, 48 whole-batch cooking and 15 cooling/setting. Cooling includes tray rest. Follow the method for batch sizes and doneness cues.

Instructions
Mix the thick batter
- 1Mix the thick batterWhisk eggs, sugar and lemon zest for 2 minutes until lightly foamy. Whisk in the 54 g oil. Fold in flour, baking powder and salt until the batter is smooth, thick and spoonable. Keep the separate 5 g oil for the iron.
Heat the patterned iron
- 2Heat the patterned ironUse a ferratelle iron or a thin-wafer electric pizzelle iron, not a deep Belgian waffle maker. Preheat following its instructions; allow about 5 minutes. Brush the plates very lightly with the measured greasing oil, using it across the batches as needed. No oven temperature is required.
Cook one wafer at a time
- 3Cook one wafer at a timePortion the batter into 20 servings of about 23 g. Put one portion centrally on a single-wafer iron and close gently. With a stovetop iron over low heat, cook about 50–60 seconds on the first side, turn the closed iron and cook another 50–60 seconds. With an electric iron, follow its operating instructions and check at about 1–2 minutes; look for a set, light-golden wafer that releases cleanly.
Repeat the complete batch
- 4Repeat the complete batchLift each wafer with a wooden or heat-safe tool and place flat on a rack. Repeat for all 20, avoiding overfilling. The 48-minute cooking allowance covers approximately 5 minutes preheating, 40 minutes cooking in a single-wafer iron and 3 minutes total loading and removal. A two-wafer electric iron will shorten the schedule.
Cool flat
- 5Cool flatCool the last wafer for 15 minutes before packing; earlier wafers cool during cooking. Do not stack hot wafers because trapped steam softens the patterns. This formula gives firm-edged wafers, with crispness depending on the iron's plate depth.
Chef’s Science & Pro Tips
Ingredient science
Iron depth determines whether ferratelle are thin and crisp or thicker and softer.
Technique & texture
Start with the specified small portion; overflow can stick around the hinges and obscure the pattern.
Finishing & serving
Keep the iron gently heated so the raised ridges do not brown before the middle sets.
Storage and make-ahead
| Method | How long | What to do |
|---|---|---|
| Room temperature | Up to 2 days | Pack completely cool, unfilled wafers airtight and keep dry. |
| Refrigerator | Not recommended for texture | Humidity softens the patterned wafers. |
| Freezer | Up to 1 month | Freeze cooled wafers in a rigid airtight box with parchment between layers. |
| Make ahead | Up to 1 day | Refrigerate covered batter; stir and let it become spoonable before cooking. |
| Serving | After thawing | Thaw in the closed box, then uncover; serve unfilled for the stated storage schedule. |
Notes
- Iron depth determines whether ferratelle are thin and crisp or thicker and softer. Start with the specified small portion; overflow can stick around the hinges and obscure the pattern. Keep the iron gently heated so the raised ridges do not brown before the middle sets. This home formula has not been kitchen-tested.
Nutrition
Approximate nutrition per serving calculated from ingredient weights divided by 20; required fillings and toppings included, optional decorations excluded. Brands, unused coating and actual serving size affect the estimate.

Frequently Asked Questions
Can I bake these on a tray?
This batter is designed for a closed patterned iron. Tray baking will not produce ferratelle.
Why are mine soft?
Thicker plates create a softer wafer, and stacking while hot traps steam. Cool individually on a rack.
Is the yield 20 sandwich cookies?
No. It is 20 single unfilled wafers. Sandwiching them would give 10 filled pairs and would require additional filling ingredients.
