Ingredients

Optional sprinkles are for decoration and are not included in the nutrition estimate. Spice weights are approximate.

Instructions

Warm the whites and sugar

  1. 1Warm the whites and sugarSet a clean heatproof mixing bowl over a saucepan of gently simmering water, keeping the bowl above the water. Combine whites, sugar and cream of tartar. Stir continuously until the mixture reaches 160°F (71°C) and feels smooth rather than gritty, about 6–8 minutes. Check the mixture with a thermometer rather than judging the water temperature. Bath heating is included in hands-on time.

Whip and fold

  1. 2Whip and foldRemove the bowl from the heat and whip with an electric mixer until cool, glossy and able to hold a firm peak, about 7–9 minutes. Add vanilla. Fold in 20 g of the finely chopped pistachios with a few gentle strokes, reserving 10 g for the tops. Do not add pistachio butter or oil.

Pipe the kisses

  1. 3Pipe the kissesHeat oven to 225°F (107°C) conventional or 200°F (93°C) fan. Line one 13 × 18-inch sheet with parchment. With a sturdy bag and 1/2-inch plain tip, pipe 30 kisses about 1 1/4 inches wide with pointed tops, using about 11 g mixture each. Leave at least 1 inch between them. Scatter the reserved pistachios lightly over the wet surfaces.

Bake until dry

  1. 4Bake until dryBake the full sheet 120–150 minutes, keeping the oven door closed. A cooled sample should lift cleanly from parchment and break with a dry center rather than a gummy core; extend in 15-minute increments if necessary. Turn off the oven and cool the kisses inside for 60 minutes, then pack promptly once cold. The timing allowance uses 150 minutes of oven drying plus 60 minutes cooling.

Chef’s Science & Pro Tips

Ingredient science

Keep all bowls and beaters free of grease so the egg foam can build volume.

Technique & texture

Small dry pistachio particles distribute through the foam without blocking a plain tip.

Finishing & serving

Humidity can extend drying; use a cooled sample to assess the center.

Frequently Asked Questions

Why are these mostly ivory rather than green?

Only a small amount of real pistachio is used, so the meringue stays ivory with green flecks; no coloring is included.

Is this Italian meringue?

It uses a warmed Swiss-style foam followed by baking. Italian-style describes the nut flavor adaptation, not a hot-syrup meringue method.

Can I keep the whipped mixture for tomorrow?

No. Pipe and bake promptly; stored or frozen foam loses structure.
