Instructions

Rest the fig filling overnight

  1. 1Rest the fig filling overnightFinely chop or pulse the soft figs and raisins until they form small sticky pieces. Mix with walnuts, almonds, cocoa, cinnamon, orange zest, cooled coffee and honey. Press into a covered container and refrigerate for 12 hours. The filling should become a thick scoopable paste; this overnight rest is the 720-minute chill/rest allowance.

Chill the shortcrust during the filling rest

  1. 2Chill the shortcrust during the filling restDuring the final hour of the filling rest, mix flour, baking powder, salt, sugar and lemon zest. Rub in cold butter, then add the dough egg and milk. Bring together briefly, wrap and refrigerate for 60 minutes while the filling finishes its rest. This overlapping dough chill does not add another hour to the total.

Fill and seal the crescents

  1. 3Fill and seal the crescentsHeat the oven to 350°F (177°C) conventional or 325°F (163°C) fan. Divide dough into 24 portions, about 24 g each. Roll each between parchment into a roughly 3-inch circle about 1/8 inch thick. Put one twenty-fourth of the filling, about 17 g, in the center. Fold in half and press the curved edge firmly closed with a fork, keeping filling away from the seam.

Add the festive finish

  1. 4Add the festive finishArrange 12 crescents on each of two lined large sheets, 1 1/2 inches apart. Brush thinly with the separate beaten egg and distribute the measured sprinkles over the tops. Discard any remaining egg wash.

Bake both batches

  1. 5Bake both batchesBake one sheet at a time for 18–22 minutes, allowing 44 minutes for both. The pastry should be light golden, with a dry base and set curved seam. Rest on each sheet 10 minutes, then transfer carefully to a rack for 30 minutes.

Cool before storing

  1. 6Cool before storingLet the filling and pastry cool completely before packing. The stated yield is 24 finished filled crescents, not 48 pastry halves. Store the moist filled cookies according to the shorter storage schedule below.

Chef’s Science & Pro Tips

Ingredient science

Use soft dried figs; tough, leathery figs will not become a smooth enough filling simply by chopping.

Technique & texture

The overnight refrigerated rest lets the dried fruit absorb the measured coffee without requiring a stovetop reduction.

Finishing & serving

Keep filling away from the edge and crimp firmly so the crescents do not open as they bake.

Frequently Asked Questions

Must petrali be covered in chocolate?

No. Regional and family finishes vary. This formula uses the documented egg-wash-and-sprinkle finish, with all topping ingredients included.

Why rest the filling overnight?

It allows the fig and raisin pieces to absorb coffee and become a cohesive paste before the crescents are filled.

Can I use fresh figs?

Not in this formula. Fresh figs contain much more water and require a separately developed cooked filling.
